Ah, le vacanze!
Una delle cose che mi piace di più quando sono in giro per il mondo, oltre naturalmente a visitare posti sconosciuti o rivedere i luoghi del cuore, è svegliarmi e sapere che qualcuno preparerà la colazione per me. Io che la mattina sono un’eterna indecisa trovo che la colazione pronta sia una coccola favolosa. A metà giugno siamo andati in gita con l’Avis a Trieste e Aquileia e la colazione in albergo per me è stata una gran soddisfazione. Invece del solito inizio del giorno all’italiana con cappuccino e cornetto, ho optato per un minuscolo panino ai cereali con del formaggio e prosciutto e uno yogurt. Credo di essere stata l’unica che ha fatto onore al buffet salato. Il fatto che ci fosse questa opzione ha reso la colazione una bella esperienza.
Stamattina invece mi sono svegliata molto affamata e, con un gran sorriso, sono andata a prendere in frigo la mia porzione di porridge di quinoa alla quale ho aggiunto una pesca noce bella matura e profumata e un cucchiaino di sciroppo d’acero. Iniziare così la giornata è stato fantastico. Non ho dovuto ciabattare di fronte alle opzioni: caffè americano - espresso – tè (ne ho mille quale mi faccio?) – latte macchiato – latte freddo, per non parlare di “Voglio dei cereali? Magari un toast... Forse due biscotti...”
Io alla colazione la mattina non ci devo proprio pensare!
Ieri sera, mentre in tele imperversava il calcio, io sfogliavo riviste e quando sono arrivata a pagina 78 di Goodfood di questo mese ho trovato la colazione per oggi: il porridge fatto con la quinoa. Devo dire che ultimamente mi sono fatta un po’ prendere la mano e ho comprato molta quinoa, integrale, rossa, tutta bio naturalmente, ma oltre a farci il mio tortino con feta e salmone, delle gustosissime polpette, o usarla al posto del cous cous, e nonostante abbia preso un libro di ricette a base di quinoa, non sono molto ispirata, così l’idea di mangiarla per colazione mi ha subito arriso.
Ecco la mia versione di questa semplice ricetta, vista la stagione calda io ho preferito servirla fredda, accompagnata da una bella pesca nettarina matura, ma anche frutti di bosco, mango, banana, pera, mela, insomma, la frutta che più vi piace o che avete in casa farà da accompagnamento a questo porridge profumato con delle bacche di cardamomo. Potete sostituire il cardamomo con della cannella, una grattatina di noce moscata, dello zenzero in polvere, o omettere le spezie se non ci piacciono. Per dolcificare ho usato dello sciroppo d’acero, ma una punta di stevia, sciroppo d’agave, o miele posso essere gustose alternative.
Come vedete le possibilità sono molte, lo dico spesso nelle ricette che propongo ma mi piace proporre alternative, dare spunti per nuovi sapori e accendere la curiosità in chi si ferma a leggere i piatti che propongo.
Ecco come si fa.
Per 2 persone
  • 75 g di quinoa
  • 30 g di fiocchi d’avena (io ho utilizzato l’avena per porridge scozzese che è macinata più un cucchiaio di fiocchi d’avena per dare consistenza al composto)
  • 4 bacche di cardamomo verde
  • 250 ml di latte (potete utilizzare anche un latte vegetale come quello di mandorle, soia, riso)
  • 2 pesche nettarine mature
  • 2 cucchiaini di sciroppo d’acero (o dolcificanti alternativi)
Mettete la quinoa in un colino a risciacquatela in acqua fredda.
Mettete la quinoa, l’avena e le bacche di cardamomo schiacciate in una pentola poi aggiungete 250 ml di acqua e 100 ml del latte che avrete scelto. Portate a ebollizione poi abbassate la fiamma e fate cuocere per circa 15 minuti mescolando di tanto in tanto, facendo attenzione che il latte non bolla troppo perché potrebbe fuoriuscire dalla pentola.
Passati i 15 minuti aggiungete il restante latte, mescolate e fate cuocere per altri 5 minuti o fino a che avrete un composto cremoso.
Rimuovete le bacche di cardamomo e, se volete consumare il vostro porridge caldo è pronto per essere servito, basta suddividerlo in due ciotole, aggiungere la frutta e il dolcificante scelto.
Se come me preferite mangiarlo freddo, suddividete il porridge in due contenitori, fate raffreddare, coprite e mettete in frigo fino al mattino. Al momento di servire aggiungete la frutta, il dolcificante e godetevi questa sana e gustosa colazione.

Oh, I love the holidays!
One of the things I like best when I’m travelling around the world, a part from visiting new places or going back to loved ones, is when I wake up and know that someone else will make breakfast for me. In the morning I’m the eternal undecided, and so I find that a readymade breakfast a great treat. In mid-June we went on a trip with Avis to Trieste and Aquileia and for me breakfast at the hotel was a great satisfaction. Instead of the usual start of the day the Italian way with a cappuccino and a croissant, I opted for a tiny cereal bun with cheese and ham followed by a yogurt. I think I was the only one who went for the savoury buffet. The fact that there was this savoury option made breakfast a good experience.
This morning I woke up very hungry and with a big smile on my face, I went to the fridge to get my quinoa porridge to which I added a beautiful and fragrant ripe nectarine and a teaspoon of maple syrup. Such a great start of the day. I didn’t have the face the usual options: American coffee - espresso - tea (I have a thousand different teas, which should I brew?) - latte – a glass of cold milk, not to mention "Do I want some cereal? Maybe a toast ... Maybe a cookie or two..."
It’s better if I don’t think about breakfast first thing in the morning!
Last night, while there was football on TV, I was flicking through some magazines, and when I got to page 78 of this month’s GoodFood I found my breakfast for today: porridge made with quinoa. I must say that lately I got a little carried away and I bought a lot of brown an red quinoa, organic of course, but beyond making my Smoked Salmon, Feta Cheese and Quinoa dish, some tasty patties, or using it in place of cous cous, and despite having bought a book of recipes based on quinoa, I am not very inspired, so the idea of ​​having it for breakfast made me smile.
Here's my version of this simple recipe, as it is very hot these days I preferred to serve it cold, along with a beautiful ripe nectarine, but also berries, mango, banana, pear, apple, in short, all the fruit you like or you have at hand will be the perfect paring to this porridge made even more fragrant by the use of cardamom pods. You can replace the cardamom with cinnamon, a grating of nutmeg, some ground ginger, or omit the spices all along if you fancy them. I used some maple syrup to sweeten the porridge, but stevia, agave syrup, or honey can be tasty alternatives.
As you can see the possibilities are endless, I often say this in my posts and that is because I like to give alternatives, ideas for new flavours and turn the curiosity on in those who stop and read the dishes I write about.
Here's how it's made.
For 2 servings
  • 75 g of quinoa
  • 30 g of rolled oats (I used Scottish porridge oats which are ground finely plus one tablespoon of oatmeal to give consistency to the mixture)
  • 4 green cardamom pods
  • 250 ml of milk (you can also use a non-dairy alternative such as almond, soy, rice)
  • 2 ripe nectarines
  • 2 teaspoons of maple syrup (or alternative sweeteners)
Put the quinoa in a strainer and rinse it with plenty of cold water.
Put the quinoa, oats and crushed cardamom pods in a saucepan, then add 250 ml of water and 100 ml of milk of your choice. Bring to a boil then reduce the heat and simmer for about 15 minutes, stirring occasionally, making sure that the milk doesn’t boil over.
After 15 minutes add the remaining milk, stir and cook for another 5 minutes or until you have a creamy mixture.
Remove the cardamom pods and, if you want it hot you porridge is ready to be served, just split it into two bowls, add some fruit and the sweetener of your choice.
If you prefer to eat it cold like me, you divide the porridge into two containers, let it cool, cover and refrigerate until the morning. Just before serving add the fruit, sweetener and enjoy this healthy and tasty breakfast.

  1. Anch'io amo le colazioni che si fanno in vacanza..tutta quella scelta fa sognare. L'umore guida nei gusti che possono essere ogni mattina diversi e saziati da sapori insoliti. Il porridge non è nelle mie abitudini ma sono talmente curiosa e amante dell quinoa che non mi resta che cedere alle tue lusinghe :-P

    1. Io ADORO il porridge! D'inverno è la mia colazione preferita anche se non lo faccio spesso perché non ho voglia di alzarmi presto per cucinarlo! :D

  2. Ecco un'altra amante delle colazioni fatte in vacanza! Quando vado in albergo per me è il momento migliore della giornata, quando posso scegliere nei buffet mi si illuminano gli occhi!!
    E quando andavo in vacanza in alto adige, altre colazioni buonissime! Non ero in albergo, ma la colazione me la preparava il mio ragazzo, panino con burro e speck, una meraviglia!
    Il porridge in Italia l'avrò provato si e no 2 volte e non mi convinceva granché, ma da quando sono in Scozia è diventata una delle mie colazioni preferite! Uso sempre la versione normale e me la faccio pure al microonde, giusto per adeguarmi alle usanze locali! E il bello è che puoi usare tutti gli avanzi di frutta fresca, frutta secca, cioccolato o altre dolcierie che stazionano in giro per casa!
